About Cacao

Our cacao is not simply ceremonial grade cacao but an example of respectful co-creation between humans and the earthSeeing the cacao as a generous gift from the earth. From building the relationship with the plants to honouring the presence of cacao trees that are hundreds of years old.

The cacao is sourced from traditional farms in San Martin, Peru that work in their ancestral ways using a system that is not only promoting the forests natural biodiversity but is also preserving the farmers wisdom and tradition that has been passed on for generations.

LET'S SEE HOW CACAO
IS MADE

The cacao trees thrive in an agroforestry system, growing in harmony with the rich biodiversity of the Amazon. Other native plants like yuca and plátanos, provide essential nutrients, creating a balanced ecosystem that eliminates the need for pesticides or chemical fertilizers. Farmers care for their trees like their own children, dedicating time and energy to nurturing them. The entire community plays a role in sustaining the farms.

The fresh cacao beans are carefully hand-selected and prepared for fermentation. The husks are either left on the soil to decompose and enrich the earth or placed near the trees and filled with water, creating a habitat for the tiny mosquito species that pollinates the cacao flowers. After fermentation, the cacao beans are roasted to unlock their rich aroma. Traditionally, this process is done over an open fire. The beans must be constantly stirred to prevent burning while ensuring they reach the perfect roast.

After roasting, the beans are peeled and ground into a smooth, almost liquid paste. Once cooled, this paste solidifies into the cacao blocks we know and love. The bean husks, rich in flavor and nutrients, are often used to make a delicious and nourishing tea. Traditionally, the freshly ground cacao paste is mixed with only water and gently warmed over the fire until it reaches the perfect consistency. Various spices can be added, each bringing its own unique healing benefits.
